Step 1 // Prepare your Le Parfait® preserving jars, clean them and leave them to dry in open air..
Prepare your Le Parfait® preserving jars.
Clean your preserving jars and lids thoroughly in very hot water, either using washing-up liquid. Rinse with very hot water and allow to dry in open air. Do not wipe the jars.
Step 2 // Prepare and wash your fruit, removing stalks, stones or cores.
Prepare your fruit
Select your fruit – whether you gather it from your garden or buy it from a shop or market, there are some interesting varieties available. Wash the fruit in warm water. Discard any damaged fruit. Remove stalks, stones or cores, peel and slice the fruit if necessary.
Step 3 // Combine the fruit and the sugar in a large bowl.
Place the sugar and the fruit in the bowl.
Weigh the fruit and sugar in the proportion indicated in the recipe.
Combine them in your bowl.
Step 4 // Bring to boil.
Boil for the recommended time.
Bring to the boil and continue boiling for the time specified in your recipe. Remember that the cooking time will vary according to the fruits used, the type of sugar, the addition of a gelling agent and the desired result.
Step 5 // Check whether your jam is ready
To tell whether your jam is ready, pour a teaspoon of boiling jam onto a cold plate.
Turn the plate: if ready, the jam should slide slowly and not drip.
Step 6 // Pour the mixture into the Le Parfait® preserving jars, seal them and turn them upside down immediately.
Pour the mixture into the Le Parfait® preserving jars.
Finally, skim the jam and pour it immediately into Le Parfait® preserving jars. Seal them with screw caps and turn them upside-down immediately. This automatically pasteurizes the jam.
Always use brand new lids.
If using jars without lids, cover them with cellophane while the jam is still hot, or with paraffin wax when the jam has cooled
(12 > 24 h). In both cases, follow the suppliers ‘instructions exactly.
