Pickles

Jar :
2 Le Parfait Super 1 liter jars

Ingredients :

- 500g young carrots
- 180g beans
- yellow and green peppers
- sticks of celery
- 200g cherry tomatoes
- 1 bunch of freshly onions
- 2 garlic cloves
- 1 bunch of dill
- 1 liter white vinegar
- pepper and salt

Procedure :

1. Peel carrots and cut into fingers. Do the same with pepper, removing the core and seeds. Peel the onions. Tail the beans and destalk the tomatoes. Cut celery into fingers.

2. Scald the vegetables, then onions and garlic cloves in boiling salted water (20g of salt/litre). Bring to the boil and boil for 3 minutes. Prepare small quantities each time.

3. Remove the vegetables with a slotted spoon, immerse immediately in cold water, drain and dry.

4. Place the vegetables in jars, add dill and cover them completely with boiling vinegar (they go mouldy if they are not fully covered). Close the jars and soak for 1 month in a fresh and dark place before using.
