Ingredients

  • 1,2 kg de poires Williams
  • 1 kg de sucre gélifiant
  • 10 g de gingembre frais pelé et émincé
  • 1 c à c de graines de coriandre
  • 1 c à c de graines de maniguette (épice d'Afrique de l'Ouest)

Preparation

  1. Peel the pear variety called Williams, cut in 4 and remove the tail and seeds. Emince them finely and weigh 1kg.
  2. Macerate the flesh of the pears with the frosty sugar and the mixture of spices (fresh ginger, coriander seeds and maniguette seeds) for 1 hour.
  3. Cook over high heat and maintain boiling for 5 minutes without stirring.
  4. Check the cooking by pouring a few drops on a cold plate then tip the plate. Pear jam must flow gently.
  5. Split if necessary, then immediately put in a pot and put them upside down.
