Recipe Pear jam with Epices

- Peel the pear variety called Williams, cut in 4 and remove the tail and seeds. Emince them finely and weigh 1kg.
- Macerate the flesh of the pears with the frosty sugar and the mixture of spices (fresh ginger, coriander seeds and maniguette seeds) for 1 hour.
- Cook over high heat and maintain boiling for 5 minutes without stirring.
- Check the cooking by pouring a few drops on a cold plate then tip the plate. Pear jam must flow gently.
- Split if necessary, then immediately put in a pot and put them upside down.
