- In a Dutch oven, sweat the onions finely minced in a little olive oil then add and brown the pork previously cut in dice of 3 or 4 cm for 5 minutes.
- Sprinkle with flour and mix then cover with water, add the curry, the garlic cloves, the bouquet garni, the tomato, the apple, the harissa, the raisins. Salt, pepper, mix and simmer for 50 minutes.
- Fill the jars with the pork pieces and complete with the sauce (remove the bouquet garni) up to 2 cm from the edge.
- Close and proceed immediately to heat treatment, 2 hours to 1200 ° C.
