- Choose very ripe peaches. Peel them, pit them and cut them into thin slices. Weigh them.
- Put the peaches, the sugar, the spoonful of ginger powder in the bassine with bonfit, mix and let macerate for a few hours.
- Bring to ebullition. From this moment, count the cooking time: 7 minutes with a giant sugar, otherwise 15 to 20 minutes with caster sugar.
- Maintain a high fire and stir often.
- Check the cooking by pouring a few drops on a cold plate then tip the plate. The jam must flow slowly.
- Split then proceed without waiting for the puts, close them and return them for 1 min, then put them back to the right to let them cool.
Tip: If your fruits are naturally very sweet, you can reduce the amount of sugar.
