  • 1,2 kg abgewogene entkernte Pfirsiche
  • 1,2 kg Puderzucker und/oder Kristallzucker (oder 1 kg Gelierzucker)
  • 1 Teelöffel gemahlener Ingwer

Preparation

  1. Choose very ripe peaches. Peel them, pit them and cut them into thin slices. Weigh them.
  2. Put the peaches, the sugar, the spoonful of ginger powder in the bassine with bonfit, mix and let macerate for a few hours.
  3. Bring to ebullition. From this moment, count the cooking time: 7 minutes with a giant sugar, otherwise 15 to 20 minutes with caster sugar.
  4. Maintain a high fire and stir often.
  5. Check the cooking by pouring a few drops on a cold plate then tip the plate. The jam must flow slowly.
  6. Split then proceed without waiting for the puts, close them and return them for 1 min, then put them back to the right to let them cool.

Tip: If your fruits are naturally very sweet, you can reduce the amount of sugar.
