For the record ... The development of yellow wine is associated with the culture of Savagnin and the abbesses of Château-Chalon whose abbey was founded in the 7th century. It is said that the pleasures of the flesh being prohibited, they postponed their love to wine. According to legend, the discovery of yellow wine is attributed to chance and a winemaker who, having abandoned an old barrel at the bottom of his cellar, would have discovered many years later the wonderful metamorphosis of his wine.
