Für 2,5 kg Pastete:

  • 1 kg Schweinekehle
  • 1 kg Schweinebauch
  • 500 g Schweineleber
  • 10 cl Cognac
  • 3 Eier
  • 25 cl Milch
  • 45 g feines Salz
  • 5 g gemahlener Pfeffer
  • 5 g Rabelais-Gewürze
  • 10 g Kurkuma

Preparation

  1. The day before, cut the pork liver into strips and make it macerate with the cognac.
