Recipe Broccoli / zucchini soup

Ingredients

Number of persons: 6
  • 500 g di broccoli
  • 2 carote
  • 500 g di zucchine
  • 2 scalogni
  • 1 dado per brodo vegetale
  • Sale pepe

Quando si serve:

  • Prezzemolo tritato
  • 2 cucchiai di crème fraîche

Preparation

  1. Wash the broccoli and detail them in small bouquets. Peel and cut the carrots into rings. Wash the zucchini and cut them into small sections. Peel and mince the shallots.
  2. Boil 1 liter of water in a casserole dish and melt the cube broth and shallots. Start cooking broccoli, carrots and zucchini. Salt and pepper.
  3. Cover and cook over high heat for about thirty minutes.
  4. Mixer.
  5. Fill the jars Le Parfait Super up to 2 cm from the edge. Close and proceed immediately to heat treatment, 2 hours at 100 ° C. Your canned vegetable soup is ready!

When serving, add to this zucchini and broccoli recipe 1 tablespoon of chopped parsley, 2 tablespoons of fresh cream, salt, pepper and mix everything well.
