  • 500 g frischer Schweinebauch

  • 2 Esslöffel Mehl
  • 9 g Salz pro Pfund und 1 g Pfeffer pro Pfund
  • 4 Gewürze oder Muskatnuss
  • 3 Schalotten
  • 2 Esslöffel Alkohol (Cognac, Armagnac, Eau de vie)

Preparation
