  • 1 Zitrone
  • 2 Orangen
  • 500 g Äpfel
  • 1 kg reife Birnen
  • 100 g entkernte Pflaumen
  • 100 g Datteln
  • 200 g getrocknete Feigen
  • 200 g getrocknete Aprikosen
  • 100g Rosinen
  • 150 g Walnusskerne
  • 150 g Mandeln
  • 1 Prise Zimt
  • 1 kg brauner Zucker

Preparation

  1. First, take the time to brush lemon and oranges under running water. Grate their zest and press their juice, then set aside.
  2. Wash the apples and pears without peeling them then cut them into small dice. Put them in a large saucepan, add 2 glasses of water and cook covered for about thirty minutes.
  3. When the fruits are well cooked, remove them from the heat and pass them to the sieve to recover the juice. The cooked fruits can be used as a compote for a fodder or a pie.
  4. In a jam bowl, mix the ingredients: juices, zest, dried fruits (except nuts and almonds) cut into small pieces, add the cinnamon and brown sugar then bring to a boil and cook for 10 min by small broth without ceasing to mix.
  5. Add the nuts and almonds crushed to this Christmas recipe and prolong the cooking of 10 min.
  6. Check the cooking of this fruit jam by testing the cold plate, immediately put in pots, close them and turn them back for 1 min, then put them back to the location to let them cool.
