  • 1 kg d'oignons
  • 100 g de sucre
  • 20 cl de vin blanc sec
  • 10 cl de vinaigre de vin blanc
  • 100 g de beurre
  • Sel et poivre

Preparation

  1. Finely mince the onions then sweat in the butter, without letting them brown.
  2. Salt, pepper, add the sugar, sprinkling and mixing then simmer for 10 minutes.
  3. Add the aromatic base: wine and vinegar. Cook for another ten minutes. Check the consistency of this onion jam: it should not be liquid.
  4. Then fill the terrines Le Parfait Super 125 and immediately proceed to the heat treatment of your canned onion compote, 40 minutes at 15 ° C.

Tips: You can taste this onion jam with grilled meat, roast or of course foie gras.
