Ingredients

Number of persons: 4 à 6
  • 1,2 kg d'oranges, chair uniquement, sans pépins ni membranes
  • écorces d'orange
  • 1 kg de sucre de confiture (avec pectine) ou 1,2 kg de sucre fin en poudre
  • 50 ml de Cointreau

  1. Peel the oranges and remove the skin. Coarsely chop and remove the seeds or the membrane. Check that you have 1.2 kg, if necessary.
  2. Wash the skins carefully and cut a few in strips.
  3. Put the oranges, sugar and zest in a frying pan. Stir and bring to a boil. Once boiling is strong, cook over high heat, stirring constantly, for about 7 minutes if you use jam sugar or 15 to 20 minutes if you use ordinary sugar.
  4. Once cooked, add the Cointreau and mix.
  5. Check the whole by pouring a few drops on a cold plate and tilting the plate. The jam must flow slowly.
  6. Skimmed to eliminate foam, if necessary.
  7. Immediately pour the jam into the jam jars Le Parfait. Close tightly and turn the jars back.
