Recipe Campaign pâté in turmeric

Voilà une bonne recette de pâté de campagne maison avec une petite note de curcuma qui fait toute la différence ! Les 40 mn que vous prendrez pour le confectionner seront bien consommées ! A déguster toute l'année sur de bonnes baguettes ou de belles tranches de pain de campagne.

Ingredients

Pour 2.5 kg de pâté :

  • 1 kg de gorge de porc
  • 1 kg de poitrine de porc
  • 500 g de foie de porc
  • 10 cl de Cognac
  • 3 oeufs
  • 25 cl de lait
  • 45 g de sel fin
  • 5 g de poivre moulu
  • 5 g d'épices Rabelais
  • 10 g de curcuma

Preparation

  1. The day before, cut the pork liver into strips and make it macerate with the cognac.
  2. Cut into strips the chest and pork throat and switch them to the chopper with the liver, using the medium grid of the device.
  3. Then put in a large container the mince (chest, throat and liver), then add the eggs, milk, spices, turmeric. Salt and pepper, then mix everything well with your hands.
  4. Leave to rest in the fridge for one to two hours.
  5. Mix well again and integrate the preparation into the terrines Le Parfait Great or Le Parfait Familia Wiss then proceed with thermal treatment (sterilization) for 3 hours at 100 ° C.
