Ingredients

Number of persons: For 15 jars Le Parfait Super
  • 1 kg of throat
  • 2 kg of game meat
  • 18 g of salt/kg
  • 8 g of pepper/kg
  • 1 egg for 2 kg
  • 1 teaspoon of spices per kg (see details in the recipe)
  • Alcohol

Preparation

  1. Grind the meats.
  2. Add salt, pepper and add the spices and egg. Depending on the choice of meat, the spices and alcohols differ. For a wild boar terrine: Porto or Madeira, juniper berries (5 per kg), coriander (15 per kg), parsley, garlic (2 cloves per kg). For venison: Armagnac, paprika, 4 spices.
  3. Mix well, then fill the Le Parfait terrines up to 2cm from the rim and immediately proceed to the heat treatment for 3 hours at 100°C. Your game terrines are ready!

J’étais dans le doute et je suis maintenant convaincu que 1 tiers de gorge est insuffisant, trop peu de gras et gelée qui reste liquide. C’est pas parfait même si le goût y est, j’ai mis du poivre vert.
